Romaine Artichoke Salad

It's been a little steamier these past few days here in the Midwest... which gives me zero desire to turn on my oven or stovetop! Cold foods are all I want to eat when it gets hot outside. (I know, it's been downright cool compared to a normal summer, but this momma-to-be has been feeling the heat and humidity!) Romaine Artichoke Salad is a crisp and cool side dish that's perfect for the summertime. It makes enough for a crowd, which makes it great for entertaining. My husband and I were actually visiting family back home in Illinois this weekend, and we brought this salad along to a cook-out. It was a big hit, especially considering it's on the healthy side! (It's hard to go for the salad when the buffet is loaded with mac & cheese, deviled eggs, potato salad, chips & dip, etc...) Crisp romaine, fresh cherry tomatoes, artichoke hearts, and red onion are all tossed in a zesty red wine Italian dressing. It's all topped off with a generous dusting of Parmesan cheese, which adds a punch of extra flavor. With about 10-15 minutes of prep time, you've got a delicious side dish, or entree-style salad if you add a piece of grilled chicken or steak. IMG_7569 Start by combining the following in a bowl: 3 heads chopped romaine lettuce, 2 cups halved cherry tomatoes, 1 can of drained artichoke hearts, and about 1/2 a diced red onion. We used cherry tomatoes fresh from my mom's garden, and they were so good! The tomatoes I've been picking up at Chief have also been super fresh and sweet - did you know they try to source as much produce from local growers as possible? IMG_7571 For the dressing, combine the following in a jar or container: 1/3 cup vegetable oil, 5 tablespoons red wine vinegar, 2 tablespoons water, and 1 packet Good Seasons Zesty Italian dressing mix. The extra 3 minutes it takes to make the dressing (versus using a bottled version) is definitely worth it! IMG_7573 Just before serving, toss the salad with the dressing, and top with as much Parmesan cheese as you desire.

Romaine Artichoke Salad

Servings/Yield: 8-10 servings

  • 3 heads Romaine lettuce, diced
  • 2 cups grape tomatoes, halved
  • 1 can artichoke hearts, drained & chopped
  • 1/2 red onion, diced
  • Parmesan cheese, to taste
  • Dressing
    • 1 package Good Seasons Italian dressing mix
    • 5 tbsp. red wine vinegar
    • 2 tbsp. water
    • cup vegetable oiloil

Method

In a large bowl, combine romaine, grape tomatoes, artichoke hearts, and red onion. In a small jar, combine dressing ingredients; shake to combine. Just before serving, pour dressing over salad; toss to combine. Top with Parmesan cheese.
